Optimal health means having energy, stamina, strength, flexibility and endurance to deal with the unexpected stresses encountered in everyday life.
Good health cannot and must not be taken for granted, and is the most effective way to avoid degenerative disease and thus achieve the maximum number of years of active, enjoyable living.
Why is it that we spend most of our lives working hard to save enough money to enjoy the golden years, only to discover that we are going to have to spend a great deal of that money trying to regain the health we sacrificed in our harried pursuit of material comfort ?

It is like building a house. An important consideration is quality construction material to withstand external environmantal conditions. In building optimal health, the construction materials are nutrients - macronutrients (carbohydrates, proteins, and fat we eat), & micronutrients (vitamins, minerals, antioxidants, and trace elements).
So If the nutrients are not in the the soil, they are not in our food. If overprocessing and adding preservatives to this food removes most of the remaining nutrients from our daily diets, then adequate nutrients cannot get into our bodies.
